"Pre-service": how to organize the back of the house.

The most delicious mushroom, in my opinion, excepting the truffle. 

Lots of folks wanted the kabocha squash soup recipe. It's the usual suspects: onions, leeks, kale, carrots, herbs, squash (pre-roast it for sweetness and easy peeling), and water. Finish with cider vinegar and goat cheese. Yum.

The onion patrol seemed to love the pain...

And that's why the gallette tasted so good.
